New York Cheesecake


INgredients

  • Required: 10-inch Spring Pan


Crust

  • 1 Pack of Graham Crackers or 1 1/4 Cup
  • 1/4 Cup of Sugar
  • 2 Tablespoons Butter (Salted Butter Preferred)


Cake

  • 5 - 8oz. Cream cheese
  • 5 Eggs + 2 Yokes
  • 1½ Cup Sugar
  • 1 Tablespoon + 1 Teaspoon Pure Vanilla + 1 Teaspoon Vanilla Bean
  • 1 ½ Teaspoon - Lemon Juice
  • 3 Tablespoons - Flour (Self-rising Preferred)
  • Dash of salt
  • 1/4 Cup - Heavy Whipping Cream
  • 1 Tablespoon - Vanilla Bean Paste (Amazon has)

Directions

Bake crust 350° for 8minutes (Let cool completely)


Cake

  • Microwave all the cream cheese for 45 seconds. (This helps to make it creamier when mixing.)


  • Cream Cream Cheese for 3 minutes - add sugar & mix.
  • Add your Vanilla Flavoring and Vanilla Bean Paste, Salt, Lemon Juice, & Mix Well.
  • Slowly add your eggs one at a time.
  • Add Flour and Heavy Cream. Mix till all is combined.


  • Use a 10-inch form pan. (I fill mine a half an inch from the top. It will be full. You will have some left. I make mini cheesecakes out of the remaining Cheesecake.


  • Bake at 240° for 1 hour and 30 minutes (with a pan of water in the oven with the Cheesecake).


  • Once the time is up, open the oven door and don't get out for 2 hours.
  • Refrigerate overnight in the form pan.


  • The next day, when removing the pan, take a Hot Knife and run around the edges first.


Yeast Rolls


INgredients

  • 2 cups - Warm Milk
  • 6 Tablespoons - Salted Butter
  • 1 Egg
  • 2 Tablespoons - Instant Yeast
  • 3 Teaspoons - Salt
  • 1/4 Cup - Sugar
  • 5 ½ Cups - Bread Flour

Directions

  • Microwave your Milk & Butter together for 1 to 1 1/2 minutes.
  • Stir, it should be warm (100°)
  • Next, add your yeast and let it set for 10 minutes. (It should be foamy on top.)


  • Mix together your salt, sugar, egg, & add to your yeast mixture.


  • Slowly mix together in your flour. Let mix with your dough hook for 4 minutes.


  • Oil a large mixing bowl and add your dough. (Let it sit in a warm place for 1 hour.)
  • Uncover & Punch down.
  • Roll into round balls on a Buttered Pan.
  • Let rise again for 1 More Hour
  • Bake at 350° for 8-10 minutes.


Chocolate Strawberry Trifle


INgredients

  • Chocolate cake
  • 1 Pound of Strawberries
  • 1 Cup of Sugar
  • 1 Cup of Cream Cheese Icing
  • 8-ounce Container of Whipped Cream
  • Strawberry Glaze

Directions

  • Cut the Chocolate Cake into Little Cubes
  • Layer them in the Trifle Bowl


  • Wash and Cut up Strawberries
  • Sprinkle Sugar on top and let it dissolve.
  • Pour some of the Strawberry Juice over the cake cubes in the trifle bowl
  • Adding a few Strawberries and Juice as desired.


  • In a separate bowl, Mix Cream Cheese Icing & Whipped Cream until well combined.
  • Layer the Cream Cheese Mixture over the Strawberries & Chocolate Cake in the trifle bowl.
  • Add the Strawberry Glaze on top for decoration.


  • Repeat the layering process with the remaining Cake, Strawberries, and Cream Cheese Mixture as desired.
